DOMINIC CHAPMAN – The Beehive, White Waltham SOLD OUT
You may recognise Dominic’s good looks from BBC’s Great British Menu
Dominic’s hereditary passion for food stems from the highly acclaimed Castle Hotel in Taunton, which his family have owned and run for over 65 years.
Dominic has an abundance of invaluable experience. His training has seen many great kitchens around the world, in particular, one of London’s most fashionable restaurants, Kensington Place. Having spent 10 years in London, he then moved to Berkshire and the Fat Duck, eventually to open and take up the role of Head Chef at Heston Blumenthal’s Hind Head in Bray.
In January 2007, Dominic moved to the The Royal Oak Paley Street. In 2008 Dom’s passion in the kitchen gained the Royal Oak a Michelin Bib Gourmand. The Royal Oak was awarded a Michelin star in January 2010, 6/10 in the good food guide and 3 AA Rosettes.
In August 2014, Dominic became Chef/Patron of his own pub/restaurant. The Beehive in White Waltham, the Beehive is a beautiful country pub/restaurant, White Waltham is a pretty village close to Maidenhead, and the pub overlooks the village cricket pitch and Berkshire countryside. Dominic continues to have a huge passion for the hospitality industry; he aims to create a successful restaurant and fine culinary experience within a relaxing village pub.
Dominic’s philosophy is to ‘Feed his customers and make them happy’ he aims to do this by offering heart warming, seasonal and affordable dishes packed full of flavour.

JAMES MACKENZIE – The Pipe & Glass Inn, The East Riding of Yorkshire SOLD OUT
We are thrilled to welcome Yorkshireman James and Proud owner of East Yorkshires 1st Michelin Star
James Mackenzie, who grew up in Filey on the North Yorkshire coast, started his career in the kitchen at just 13 years old, before going on to train at Scarborough Technical College (now Yorkshire Coast College).
James and wife Kate took over the Pipe and Glass in South Dalton, near Beverley in 2006 and created a warm, comfortable Yorkshire country pub, where customers can drop in for a pint of ‘Two Chefs’ ale, or enjoy the highest standards of modern cuisine.
In 2010, the Pipe and Glass was awarded East Yorkshire’s first Michelin Star, an award that it has retained ever since. The Pipe and Glass now includes five luxury boutique rooms, an exclusive private dining suite and an elegant, airy restaurant, as well as the welcoming, traditional bar area.
James is keen to champion the next generation of chefs and launched the Golden Apron competition, in search of Yorkshire’s best young chefs’. James’ has also recently launched 3 Golden Apron products into Asda stores. He works closely with local colleges to provide the Yorkshire Chefs Certificate.
James’ debut cookbook ‘On the Menu’ was released in 2012, and won best debut cookbook at the Gourmand World Cookbook Awards in Paris.
In 2016, both James and the Pipe and Glass received national recognition, with James being named Craft Guild of Chefs Dining pub restaurant Chef of the Year and the Pipe and Glass being named at number 2 in the Morning Advertiser Top 50 Gastropub awards, as well as Yorkshire Dining pub of the year 2017 in the Good Pub Guide.

ROY BRETT – Ondine, Edinburgh SOLD OUT
Roy Brett is one of the leading figures in Scotland’s food revolution.
Born and raised in Edinburgh, his CV covers some of the best establishments in Britain. After a three-year apprenticeship at Edinburgh’s Caledonian Hotel under Alan Hill and Jeff Bland, he moved to the Savoy Grill in London before going on to work as Head Chef at One Devonshire Gardens in Glasgow and with Mark Hix at Le Caprice in London.
Returning to Scotland, Roy then became Executive Chef at Malmaison overseeing the entire food and beverage operation for Ken McCulloch, including the opening of the flagship property in Leith.
Roy then joined Rick Stein in Cornwall and became his Head Chef. While Rick and Roy worked together, Stein’s flagship restaurant in Padstow was named Restaurant of the Year for four consecutive years.
In 2007 Roy came back to Scotland as Chef Director at Dakota Hotels, opening branches at Euro Central and then Forth Bridge shortly afterwards. Under his care, Dakota became the first Scottish restaurant to earn an accreditation for sustainable sourcing from the Marine Stewardship Council.
Two years later, Roy achieved his lifelong ambition of opening a top seafood restaurant in his home city. Since then, Ondine has achieved critical acclaim and earned Roy a string of awards including Chef of the Year, AA Restaurant of the Year and holds a regular place in the UK list of Top 100 Restaurants.
Roy is committed to sustainable seafood and works with only the best suppliers in Scotland and around the country, including Guy Grieves from the Ethical Shellfish Company in the Isle of Mull and Welch Fishmongers at Newhaven who have supplied Ondine since the day it opened.
As a leading industry figure, Roy has also advised the Scottish Government on sustainable seafood issues and has represented Scotland at major food and cooking events in Ireland, Abu Dhabi and Singapore.

CHRIS BOLAN – Trinity, Clapham London
A local lad, originally from Whitley Bay, Chris now lives and works in the capital. Talented Chris is an integral part of the team at awarding winning, ‘On Vogue’ Trinity where the ethos focuses on seasonal, inspirational, delicious food, providing its guests with a memorable gastronomic experience.
Trinity has been delighting the diners of South London for over 10 years now and was awarded its first, very well deserved Michelin star in 2016.
Chris Bolan grew up in Corby, graduating from Northampton College in 2007. After graduating, Chris moved to Leicester and worked in a boutique hotel before moving to London in 2013. Chris has been working at Trinity restaurant since 2013 and is a gifted Chef on many fronts. Chris is currently Sous Chef at Trinity, where amongst his many responsibilities, he singlehandedly oversees all of the in-house charcuterie. His ethos in the kitchen is to cook food that is ingredient-led, straightforward and simply delicious.”
£5 from the sale of each ticket from this evening will donated The Bright Red Charity in aid of Blood Cancer. This is in memory of Chris’s late Father, There will also be a raffle & a chance to donate to this great cause on the night.
